One day cooking class begins at 10 a.m. and end around 14p.m. and always includes meal and wine. But you can only choose to taste meal at the end.
Hands-on cooking pasta. Some recipe:
a. Pasta al sugo di maiale, pasta alla norma, pasta al finocchietto selvatico, Parmigiana, caponata ed altro ancora…
You will make on your own pasta al sugo di maiale , fresh pasta served with a pork meat sauce, pasta alla norma with fresh tomato sauce , fried aubergines, basil leaves and pride of sprinkling of dried ricotta cheese.
Pasta served with wild fennel , parmigiana layer upon layer of aubergines, or caponata a medley of vegetables cooked slowly in olive oil and seasoned with olives and pine nuts and much much more…
Hands-on cooking red or white meat .Enjoy one of this savoury second course .
b. Read meat, roast or grilled seasoned with salmoriglio a mixture of oil, vinegar, origan salt and pepper : veal cutlet, fresh meatballs wropped in lemon leaves and cooked on the grill.
White meat : chicken or rabbit etc,.
c. Hands-on cooking typical Sicilian country pastries* or desss which deserve a mention all their own
Cuddura cull’ova oven-baked sweet pasta with a boiled egg on the top.
Cannoli* typical Sicilian bursting filled with ricotta and chocolate slices
Mostarda* wine-based. An old Sicilian sweetmeat made from grape must or
Zeppole di riso rice pancake with honey.
d. Vegetables* in oil aubergines, peppers, olives, mushrooms etc.
*If they are in season.
In each lesson you will find all the equipment for preparing and cooking meals, a full explication step by step during the relative preparation. So you learn to prepare:
1) Handmade bread;, from dough to cooking , step by step an interesting lesson where you discover or re discover a host of unforgettable traditional flavours from this sweet-smelling fragrant bread , followed by a tasting where bread will be enjoyed with biological olive oil, salt, pepper, garlic, dark olives and slices of pecorino, a goat’s milk cheese.
2) A typical scacciata ( Sicilian pie) stuffed with a mixture of tomatoes, onions, aubergines, potatoes, pork meat sausages or cauliflowers, broccoli etc, .
3) Vegetable balls … and much more.

A certificate and an apron will be given to visitors.
